Almond Orange Cake

Ingredients


1½ cup all-purpose flour

¾ cup almond meal

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon fresh orange zest

½ cup butter, softened

1 cup caster sugar

2 cups Greek yogurt

1 teaspoon vanilla extract

2 drops orange essence

½ cup fresh orange juice

Method


  1. Preheat the oven to 180°C. Line a 8" round cake tin with parchment paper.

  2. In a bowl, whisk together flour, almond meal, baking powder, baking soda and orange zest.

  3. In a separate bowl, beat the butter with sugar until it is light and creamy, using an electric hand beater.

  4. Add the Greek yogurt beat well.

  5. Mix in the vanilla, orange essence and orange juice.

  6. Carefully fold the dry ingredients into the wet ingredients. Mix only until everything is well combined. Do not over mix.

  7. Transfer the batter into prepared cake tin.

  8. Bake at 180°C for 30-35 minutes or until a skewer inserted into the center comes out clean.
