Vegetable Uttapam

Ingredients


Dosa batter (see recipe below)

2 carrots grated

2 tomatoes chopped finely

1 onion chopped

20-25 leave of curry leaves

1/4 cup Coriander chopped


Dosa Batter


4 cups idli Rice

1 cup whole White Urad Dal

2 teaspoons Methi Seeds (Fenugreek Seeds)

Handful flatten rice (aval or poha)

Water , for soaking



Method


Dosa batter


  1. Wash and soak the rice and soak in water and add the fenugreek seeds to the rice

2. Wash and soak the urad dhal separately

3. Soak both for 6 hours or more (overnight is usually good),

4. First grind the urad dal into a fine smooth batter. Add enough water when grinding to make a very very smooth and fluffy batter

5. Pour into a large container

6. Before grinding the grinding rice add the handful of poha to the water and let it soak while grinding the urad dhal.

7. Grind rice to till smooth, it wont get as smooth as the urad dhal, add water as needed

8. Transfer to a container with urad dhal, and mix well and add some salt to taste

9.Set aside to ferment for 12 hours or more in a warm place, you will notice that batter will risen and increased in volume.


Uttapam


  1. Add the vegetable into a bowl and mix

  2. Pour thick circles on hot tava or pan

  3. Add the vegetable on top of the batter

  4. Add oil around the batter and a little bit on top

  5. Once the underside has browned, flip the uttapam and cook for a minute or till brown

  6. Remove from pan and repeat with remaining batter.

  7. Have this with idli podi chutney or sambar
