Corn and Cheese Samosa

Ingredients


Pastry


2 cups of all purpose flour

4 tablespoons of ghee

6 tablespoons of water

Salt, as required

Oil for deep frying


Corn Cheese Filling


2 cups frozen corn

1 cup grated cheese

Ginger ½ inch

2-3 Green chillies

Salt, as required

2 tbsp oil



Method



Pastry


1. Mix together the flour and salt in a bowl.

2. Knead to form a firm dough adding water little at a time.

3. Cover it with a wet muslin cloth. Let it rest for at least 20 minutes.




Filling

  1. Grind Ginger and chillies together.

  2. In a pan add the oil and heat, now add the ground ginger and chilli.

  3. Add the frozen corn, and salt, cook till the corn has cook through.

  4. Now remove from heat and let it cool.

  5. Once cooled then you can make a start on the dough.

  6. To shape the samosas, knead the dough and divide into 6 equal balls.

  7. Smoothen each ball and then roll into circles with a rolling pin

  8. Cut each circle into half using a sharp knife.

  9. Apply a little water on the straight edge of the semi circle, shaping into a cone shape

  10. Fill with about tablespoon or a bit more of the filling.

  11. Apply water in the edge and close and ensure you seal it tightly.

  12. Repeat will the remainder of the samosas.

  13. Heat oil and when hot, fry the samosas, depending on your pan size, fry 3-4 don’t overload.

  14. Cook on both side and remove when its golden brown.

Tip- Instead of making the pastry, you can use store bought puff pastry or spring roll wrappers
