Curried Eggplant

There are many different ways to make this Eggplant dish, however this is the way my mum taught me how. Whenever I have made this recipe, it is devoured by all.
Ingredients
2 Medium Eggplants
1 large onion
4 large ripe tomatoes
2-3 Green chilies
1 inch piece of ginger
2 cloves garlic
2 tsp cumin seeds
2 tsp mustard seeds
2 tsp curry powder
Canola, sunflower or ricebran oil
Salt to taste
Method
Wash and cube the eggplant
Deep fry the eggplant in oil, drain and set aside
Chop up the onions, tomatoes and chillies
Mince the garlic and ginger
Heat 2 tbsp oil, add cumin and mustard seeds
Add the chopped onions and garlic, fry till golden brown
Now add the chopped tomatoes and cook till its a paste.
Add the curry powder to the tomatoes and mix well
Add the fried eggplant to the tomato mixture and salt to taste.
Coat the eggplant in the tomatoes mixture and cook for another 3-4 minutes.
