Lime Baby Cupcakes

Ingredients


175g cup all-purpose flour

120g sugar

1 tbsp lime zest

1 tbsp lime juice

1 tsp bicarbonate soda

½ cup melted butter

1 cup sour cream

Method


  1. In a bowl, sift flour and bicarb together

  2. Cream butter and sugar using an electric hand or stand mixer.

  3. Once sugar has dissolved, add the sour cream, lime juice and zest

  4. Then add the flour bit by bit into sour cream and butter mixture and mix well.

  5. Transfer the batter into prepared cup cake tin.

  6. Bake at 180°C for 15-18 minutes or until a skewer inserted into the centre comes out clean.

  7. This recipe yields about 30 baby cupcakes
