Murukku

Ingredients


2 cups rice flour

1 cup chickpea flour

2 tbsp butter

2 tsp coarsely ground black pepper

2 tsp carom seeds

1/2 tsp tumeric

2 tsp oil

1/2 tsp aseofitida

Oil for deep frying

Water as needed



Method



  1. Heat oil in a fry pan

  2. In a bowl add all the dry ingredients and butter

  3. Heat 2 tsp oil and add this to the bowl and mix well

  4. Add water to form a soft dough

  5. Grease the murukku press with some oil and fill with the dough

  6. Once the oil is hot (test this by putting a small piece of the dough and if it rises to the top the oil it ready)

  7. Using the murukku press, squeeze a few murukku into the oil. ( Don't overcrowd the pan)

  8. Fry till golden brown flipping mid way to ensure both sides are cooked.

  9. Drain on paper towel

  10. Repeat steps 7 and 8 till you have finished all the dough.
