Spiced Potatoes

Ingredients


5 Medium sized potatoes

1 large onion

2 tsp cumin seeds

1 heaped tsp black mustard seeds

1 tsp turmeric powder

2 tsp curry powder

1 tsp turmeric powder

1-2 green chillies

salt to taste

3 tbsp oil


Method

  1. Wash and steam the potatoes whole and with the skin, till they are soft, aprrox 20-25 minutes, (stick a knife in to test if it's cooked through)

  2. Skin the potatoes and cut each potato into half then half again, then into large cubes (approx. 6 pieces per half)

  3. Slice the onion and the green chillies

  4. Add oil to a pan, when the oil is hot, add the mustard and cumin seeds (mustard seeds splatter so be careful)

  5. Now add the sliced onions and fry till golden, then add the green chilies

  6. Add the turmeric, and curry powder, fry for 1-2 mins.

  7. Add the cubed potatoes and salt to taste.

  8. Keep stirring the potatoes every 1-2 minutes.

  9. Cook for 7-8 minutes or till golden brown.
