Srilankan Roti

This roti is soft and bready, flavoured with onion and chillies, best served with a coconut sambal.


Ingredients



3 Cups all purpose flour

1 cup cold water

1 tbsp canola, sunflower or rice bran oil

3-4 green chillies

1 onion

Salt to taste



Method



  1. Chop the onion and chillies

  2. In a large bowl add the flour, salt and oil, give it a good mix

  3. Add the chopped onion and chilli to the flour

  4. Add the water to the flour mixture, little at a time till it forms a dough

  5. The dough shouldn't be sticky, if it feels sticky then add a little more oil.

  6. Shape the dough into balls

  7. Put a pan or skillet on medium heat

  8. Grease a plate with a bit of oil

  9. Flatten the dough balls with your hands into thick discs

  10. Place the roti on the pan and drizzle with oil.

  11. Cook the rotis on both sides, till its brown

  12. Repeat with the remaining dough ball
